Moong Beans

How to make Khatta Moong
Ingredients
- 200g Moong Beans
- 200g Natural Yoghurt
- 400ml Water
- 30g Gram flour
- 1 Tbsp Lemon Juice
- 1 Tbsp Jaggery
- 1 Tsp Minced Green Chillies
- 1 Tbsp Fresh ginger paste
- 1.5 Tsps Salt
- 1/2 Tsp Turmeric powder
- 1 Tbsp Sunflower Oil
- 1 Tsp Cumin Seeds
- 1 Tsp Fenugreek Seeds
- 1 Red dried Chilli
- 1 Tsp Minced Garlic
- 12 Curry Leaves
- 4 sprigs Finely chopped fresh coriander
Instructions
- Wash and soak the moong beans overnight or minimum 4 hours
- Boil the soaked moong beans until tender but holding shape, Keep aside to cool
- In a bowl add yoghurt and water and mix together
- Add salt, turmeric powder, lemon juice, jaggery, gram flour and ginger and whisk the mixture until there are no lumps. Keep aside
- In a pan add sunflower oil and heat it, add the cumin seeds, fenugreek seeds, red dried chilli and curry leaves.
- Add the garlic and sauté for a few seconds.
- Add the yoghurt mixture and cook on low to medium heat , stirring continuously for 5 minutes.
- Add the boiled moong beans with the cooking liquid and keep cooking for another five minutes. Keep stirring the mixture so yoghurt does not split.
- Once the yoghurt mixture has thickened, remove from heat and transfer to a serving bowl. Garnish with fresh finely chopped coriander leaves.
Notes
- This recipe works best with sour yoghurt
- Keep stirring the mixture whilst cooking to stop the yoghurt from splitting.

Often these specific regional recipes are not served in restaurants so readers may not have heard of them or tried them as they are home cooking that I grew up eating in a Gujarati Indian Household. To some readers these type of recipes they have never heard of.
