The Bhapa Doi can be made in individual portions, or one large bowl . there is no right or wrong way however just make sure the bowl used is heat proof and will withstand being placed in the steamer.
What type of yoghurt is best for Bhapa Doi?
Personally I recommend full fat thick and creamy Greek
yoghurt. The authentic Bhapa Doi is make with hung Curd also known as strained
yoghurt where water is drained from the yogurt by placing it in a muslin
cloth and allowing the water to drain out.. Full cream yoghurt works best for
this recipe.
